These vegan rice paper rolls with mango, mint, and avocado with an easy peanut dipping sauce are just perfect for hot summer days.

Ingredients

  • 1 About 6 radishes, slices thin
  • 1 Avocado
  • 1 cup Cabbage, purple
  • 3 Carrots, small
  • 1 Cucumber
  • 1 clove Garlic
  • 3 Green onions
  • 2 cups Lettuce
  • 1 Mango
  • 1 cup Mint, fresh

Refrigerated

  • 1 7 oz block Tofu, firm
  • Condiments

    • 1/4 cup Peanut butter, chunky
    • 1 2/3 tbsp Soy sauce
    • 1/2 tsp Sriracha sauce

    Pasta & Grains

    • 1 cooked 1 1/2 cups cooked glass Noodles
    • 6 sheets Vietnamese rice paper

    Baking & Spices

    • 1 tbsp Sesame seeds

    Oils & Vinegars

    • 1 tsp Sesame oil

    Liquids

    • 3 tbsp Water
